15 g cornstarch
50 g milk powder
115 g caster sugar
230 g CHOCOLATE CARAMELIA 36%
Heat water with cornstarch and milk powder.
Add the sugar and once the mixture is warm, pour little by little over the previously melted chocolate, stirring vigorously
Bring to a boil and let cool.
TIP: You can also boil the milk with a few coffee beans
230 g caster sugar
175 g cream 35%
90 g sweetened condensed milk
Caramelize the sugar. Deglaze with the warm cream.
Add condensed milk and mix everything. Put something into the fridge.
TIP: You can add spices or grated lemon zest to the cream
Use an ice cream maker to make the ice cream.
Pour the mixture into the ice cream maker and let it run until you get a creamy texture.
Pour the ice cream into a container previously chilled in the freezer.
Serve with whipped cream and caramel sauce and garnish with cocoa powder or fresh fruit.
TIP
If you don't have an ice cream maker, freeze the mixture flat in plastic bags. As soon as the ice
has hardened, cut into large pieces and mix. Pour the mixture into an ice-cold bowl
and place in the freezer
